　　到2050年，全球将有七成的人居住在都市，城市必须供养70亿人口。如果用传统的土壤耕作，还需要增加一整个巴西的耕作面积，才有可能养得活这么多的人，但是高楼林立的城市里，哪里生得出这么多土地呢？如果城市能够盖出摩天大楼，有可能盖起摩天农场吗？为了解决城市粮食供应的问题，垂直农场应运而生。
　　城市垂直农场把水平的农场，改造成种满植物的摩天大楼，用营养液代替土壤，用LED灯取代阳光，这些彷佛科幻小说的情节，在各领域专家的努力下，正一步步成真。垂直农法在密闭的空间种植农作物，压缩了空间，让效益极大化，除了节约土地，也节约用水量，用水仅是传统土壤种植的十分之一。可以楼上种菜，楼下卖菜的垂直农场，也大大缩短了食物里程，减少食物长途运送的资源浪费。
　　垂直农场发想者的本意，是解决全人类的问题，然而这种耕作方法现阶段仍有个无法克服的致命瓶颈，就是生产成本太高，目前只能为少数阶级服务，奢侈品是无法养活全世界的。全球人口最多的城市，有四分之三分布在亚洲，这些亚洲的大都市，无不全力支持垂直农场的发展，因为比起其它地方，他们分秒必争。

But this thrifty use of 'waste' may well be destined for your soap or cosmetics.
